Chettinad Chicken Pepper Fry

Ingredients

To grind into a powder

  • 1 tsp Cumin Seeds
  • 2 tbsp Coriander Seeds
  • 4-5 Dry Red Chillies
  • 3 tsp Black Peppercorns
  • 2 inch Cinnamon
  • 3-4 Green Cardamom
  • 1 tsp Fennel Seeds
  • 1/4 cup Dry Coconut Grated
  • 2 inch Ginger Chopped
  • 10-12 cloves Garlic

For the curry

  • 4 tbsp Vegetable Oil
  • 2 Bay Leaves
  • 1 tsp Mustard Seeds
  • 2 cups Onion Chopped
  • 1 tsp Green Chilli Chopped
  • 2-3 sprigs Curry Leaves
  • 1 kg Chicken Curry cut
  • 1 and 1/2 cup Tomato Finely Chopped
  • Salt to taste
  • 2 tsp Kashmiri Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 2 tsp Tamarind Paste

Instructions

To grind into a powder

  1. Dry roast all the ingredients in a pan till they are slightly browned and fragrant.
  2. Remove the pan from heat and let the ingredients cool.
  3. Grind the ingredients in a blender to make a coarse powder.
  4. Keep aside.

To make the curry

  1. Heat oil in a pan.
  2. When the oil is hot, add bay leaves and mustard seeds.
