Lemon Cream Cheese Pound Cake


Lemon Pound Cake:

  • ½ cup butter, softened
  • 6oz cream cheese, softened
  • ¾ cup Swerve granulated sweetener
  • 4 large eggs
  • 2 tsp pure lemon extract
  • 2 cups blanched almond flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt


  • 1 cup Swerve confectioners sugar, sifted
  • 3 tbsp half-n-half
  • ½ tsp pure lemon extract

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, beat softened butter, cream cheese, and sweetener with an electric mixer. Add eggs, one at a time, beating well after each addition. Beat in lemon extract.
  3. In medium size bowl add almond flour, baking powder, and salt and stir until combined. Gradually add to cream cheese mixture, beating well.
