  • 250g 32% Schlagrahm (HWC) 
  • 1 large egg 
  • 1 egg yolk 
  • 50g granulated Erythritol 
  • 1tsp vanilla extract

  1. Beat eggs with vanilla and Erythritol until smooth 
  2. In small saucepan, heat cream over med heat, stirring constantly until hot. Remove from heat and allow to cool. Pour through sieve into egg mixture slowly, whisking the eggs constantly (don’t make scrambled eggs) 
  3. Boil a kettle of water
